Happy 4th of July weekend! What celebrations do you have planned for the holiday? I have a low-key weekend of packing ahead. We’re supposed to close on our house two weeks from today (AHHH!) and plan on moving the following day. My parents are saints and insisted on coming over to help, which makes the process seem much less overwhelming. I’ll be working Monday, but I’m sure James and I will do something fun to celebrate the 4th that night!

I know lots of people head to picnics, potlucks and cookouts to celebrate Independence Day, so I’m rounding up some of my favorite recipes that you can easily whip up for your get together. When it comes to any holiday, I favor food I can make the night before the event or throw in the crockpot the morning of. Holidays should be about relaxing and savoring time with family and friends — not slaving away all day in the kitchen. Cheers to the holiday weekend! The 4th of July has always been one of my favorite celebrations because we spend it outdoors, eating good food, drinking craft beer and laughing nonstop with friends.

Cream Cheese Salsa Party DipWe’re hosting a party in our backyard tomorrow night and I’ve been cooking up a storm in preparation. All we have to do tomorrow is put everything out for everyone . It makes hosting so much easier — and way more fun!

One dish that’s a staple at all of our parties is creamy salsa dip. It’s the first food to disappear and people are constantly asking for the recipe. I’m embarrassed to even call this a recipe. Because it’s soooo stinkin’ easy. It tastes rich, but neufchâtel cheese helps keep this creamy dip on the lighter side.

If you need a last-minute appetizer to take to a party, this is sure to impress! And, no one will know it took only two ingredients and five minutes to whip up. Serve with tortilla chips, pretzels and veggies.

Creamy Salsa Dip

  • 8 oz. neufchâtel cheese, softened
  • 1/2 cup fresh salsa
